Honeyed Banana Squash
YIELD: Makes 6 servings
INGREDIENTS
2 1/2 lbs. - banana squash, pared and cut in 1-inch pieces
boiling water, salted
1/4 cup - butter or margarine
1/4 cup - honey
Peel of 1/2 fresh orange, grated
Juice of 1/2 fresh orange
1/4 tsp. - salt
1/4 tsp. - ground nutmeg
1/4 cup - slivered almonds, toasted
DIRECTIONS
In large covered saucepan, cook squash in 1 inch boiling, salted water until tender (12 to 15 minutes). Drain. Mash squash with electric mixer, OR in blender or food processor.
In saucepan, melt butter and stir in honey, orange peel and juice, salt and nutmeg. Gradually add hot butter mixture to squash, beating until well blended. Sprinkle with almonds.
