Peachy Coco Lassi
YIELD: Makes 2 servings
INGREDIENTS
1 1/2 cup - peach slices, fresh or frozen
1 cup - Greek yogurt
1/2 cup - lite coconut milk, canned
1/4 cup - honey
1 tsp. - vanilla
1/2 tsp. - cinnamon, plus some for garnish
1 T - toasted coconut chips or shredded coconut
DIRECTIONS
Combine all ingredients in a blender and puree’ until smooth and creamy. Serve immediately garnished with coconut chips.
TIP
Leave the peel on fresh peaches for a little extra fiber and texture.
