Pollinating Your Entire Menu: Honey Lime Chicken Tacos with Sriracha

The National Honey Month fiesta continues in this fresh edition of our delicious Pollinating Your Entire Menu blog series! With a focus on whole food nutrition, each recipe in this series features honey and showcases a variety of honey bee-pollinated ingredients, and since it is National Honey Month, we’re coming at you with a bonus recipe – Honey Lime Chicken Tacos with Sriracha!

If you checked out our recent post featuring the sweet and nutty Macadamia Nut + Coconut Pancakes with Honey (and how could you not? They are delicious!), then you learned a little about how September came to be deemed National Honey Month.

But in addition to the added attention the designation brings to the honey bees, honey as an ingredient is also worth celebrating. This time of year, we really get to celebrate all things honey, from the more than 300 unique varietals (and that’s just in the U.S. alone!) to its versatility in the culinary world. From keeping your baked goods moist (and extending their shelf life) to balancing flavor in cocktails, honey is the one ingredient that spans the entire menu! You can learn more about honey’s natural benefits here. There truly is no denying the benefits of honey as an all-natural, single ingredient.

As we have shown throughout this series, honey is a versatile ingredient that is not limited to sweet recipes, but can be a showstopper in savory dishes as well. Honey’s unique ability to play well with other ingredients makes it a culinary superstar, as demonstrated in these Honey Lime Chicken Tacos with Sriracha. By taming the heat of the Sriracha in the marinade, honey brings the perfect balance of sweet and spicy to this honey bee-centric fiesta. And the addition of such honey bee-pollinated ingredients as garlic, cabbage, broccoli and carrots are sure to take your taco party to the next level.

Ingredients:
For Marinade:

  • 2 – limes, juiced
  • 1/4 cup – honey
  • 6 cloves – garlic, minced
  • 2 T – olive oil
  • 2 tsp. – sriracha
  • pinch of salt
  • 4 – boneless, skinless chicken breasts

For Tacos:

  • 10 – flour or corn tortillas
  • 12 oz. – coleslaw mix (cabbage, broccoli, and carrots)
  • 1 T – honey
  • 2 T – lime juice
  • 1 T – vinegar
  • 3 T – mayonnaise
  • salt and pepper, to taste

Directions:
Whisk together all marinade ingredients. Put marinade and chicken breasts into a resealable bag and allow chicken to marinate for at least 1 hour and overnight, if possible. Remove chicken from bag and grill until thoroughly cooked.

While chicken is grilling combine coleslaw mix, honey, mayonnaise, vinegar and lime juice in a large bowl. Stir until evenly coated. Salt and pepper to taste.

Cut grilled chicken into bite-sized pieces. Assemble your tacos with chicken and top with slaw.
