Sautéed Broccoli with Lemon Honey Butter Sauce and Toasted Almonds
YIELD: Makes 6 servings
INGREDIENTS
1 - head of broccoli, washed and cut up into florets along with the stems
1 T - olive oil
1/2 tsp. - kosher salt
1/2 tsp. - freshly ground pepper
2 T - butter
1 1/2 T - honey
juice and zest of 1 lemon
3 T - toasted sliced almonds
DIRECTIONS
Place the broccoli along with 1/4” of water in a wide nonstick skillet, bring the water to a boil, reduce heat to low and place a tight-fitting lid and let the broccoli steam for about 5 minutes. Be sure not to let the water evaporate fully!
Remove the lid and turn the heat back up to medium-high to evaporate any remaining water. Add the butter and melt, quickly add the honey and lemon juice and toss to coat the broccoli, cook for an additional 2 minutes until broccoli is tender but still firm.
Add the lemon zest and toasted almonds and serve immediately.
TIP
Use a vegetable peeler to remove the outer skin from the stalks of the broccoli for best results!
