Sweet Potato Smash with Honey Caramelized Onions, Bacon, Walnuts & Gruyere
YIELD: Makes 2 servings
INGREDIENTS
2 large - sweet potatoes
2 T - olive oil
1 - onion, halved and thinly sliced
1 tsp. - kosher salt
1 tsp. - freshly ground pepper
1 T - balsamic vinegar
1 1/2 T - honey
4 - slices bacon, cooked crisp and cut into 1/2" pieces
1/2 cup - shredded Gruyere
3 T - toasted walnuts, roughly chopped
DIRECTIONS
Preheat oven to 375ºF.
Oil potatoes and pierce with a fork down the center, place on a sheet pan and bake for 45-55 minutes or until tender when pierced with a fork.
While the potatoes are baking, make the onions. Heat the olive oil in a skillet over medium heat and add the onions salt and pepper. Cook for about 8 minutes, add the balsamic vinegar and honey, reduce the heat to low and cook for an additional 10-15 minutes or until onions are completely translucent and caramelized
Cut an “X” in the top of the potatoes and push in the sides to open up the potato, top each with half of the cheese, caramelized onions, bacon and walnuts. Serve immediately.
TIP
This recipe would be equally good with a regular baked potato!
